Ingredients:
6 medium sized organic red potatoes, peeled and cut into ½” slices
2 tbsp extra virgin organic olive oil
1 tsp organic sea salt
½ to 1 tsp fresh organic ground pepper
1 tsp organic garlic powder
½ cup organic swiss cheese, grated (or any other preferred cheese)
1 cup organic milk (preferably non-fat)
Organic cooking spray
Instructions:
Preheat oven to 425ºF. Spray a 1 ½ quart casserole dish with organic cooking spray and arrange half of the organic potato slices in dish. Drizzle with 1 tbsp of organic olive oil and sprinkle with half the organic sea salt, half the organic pepper, half the organic garlic powder and half the organic cheese. Add another layer of potato slices and repeat the procedure. In a separate little pot, bring the organic milk to a boil on stovetop. Pour the hot milk over the potato slices and place in the oven. Bake uncovered for about 40 minutes or until potatoes are tender.

Ingredients:
1 lb extra lean ground organic beef
½ cup chopped organic onion
1 can (10 oz) red enchilada sauce
1 can (10.5 oz) condensed organic cream of mushroom soup
1 can (10 ½ oz) organic cream of chicken soup
1 can (4 oz) chopped green organic chile peppers
1 cup organic milk
1 clove organic garlic, minced
1 package organic tortilla chips, coarsely crumbled
8 oz grated organic Cheddar cheese
1 can (4 oz) ripe organic black olives, chopped
Instructions:
Preheat oven to 375°. Brown the organic ground beef together with the chopped organic onion in a large skillet. Remove from heat and drain off excess fat. Add cans of organic soups, organic chile peppers, organic milk, organic garlic and chili sauce and stir well. Grease a 9x13x2″ baking pan and place a layer of half of the crumbled organic tortilla chips on the bottom. Spoon on half of the organic ground beef mixture, layer with the remaining tortilla chips and again, top with the remaining beef mixture. Sprinkle with organic cheese and organic olives and bake in the oven for about 35 to 40 minutes.
Serve with organic rice and a tossed organic salad.

Ingredients:
3 cups organic butternut squash, peeled and cubed
3 tablespoons + 2 teaspoons organic olive oil
1/2 teaspoon organic pepper, divided
6 organic garlic cloves, minced
2 tablespoons organic balsamic vinegar
1 teaspoon brown organic mustard
1 pound fresh organic spinach
2 (15 ounce) cans cannellini beans, drained and rinsed (organic, if possible)
1 tablespoon organic sage
1/4 cup organic Romano cheese, grated
Instructions:
Preheat oven to 350 degrees.Spray a cookie sheet with a non stick organic cooking spray. Coat the organic squash with 1 tablespoon of organic olive oil. Sprinkle the organic squash with 1/4 teaspoon of organic pepper. Place the organic squash on the prepared cookie sheet. Bake 25 minutes or until fork tender. Place the 2 tablespoons of organic olive oil and organic vinegar into a mixing bowl. Whisk to combine. Add the organic brown mustard and 1/8 teaspoon of organic pepper. Whisk to combine. Place the remaining organic olive oil into a skillet over medium heat. Heat the oil to hot but not smoking. Add the organic spinach and cook until wilted. Sprinkle on the remaining organic pepper. Remove the organic spinach from the heat and set aside. Place the organic beans in a microwave safe bowl. Add the organic squash, organic vinegar mixture, organic garlic and organic sage. Stir gently to combine. Microwave on high 1 minute or until warm. If not warm enough after 1 minute microwave at 30 second intervals to your liking. Serve over the wilted organic lettuce and sprinkle with the organic cheese. Serves 5

Ingredients:
1 tablespoon organic honey
1/4 teaspoon organic cinnamon
1/8 teaspoon organic nutmeg
2 (6 ounce) containers organic vanilla yogurt
2 1/2 cups organic honeydew melon, cubed
2 cuts organic raspberries
Instructions:
Place organic honey in a mixing bowl. Sprinkle in the organic cinnamon and organic nutmeg. Add organic yogurt and blend ingredients well using a rubber spatula. Cover and refrigerate 30 minutes. Serve with the organic fruit when chilled. Serves 4

Ingredients:
1 cup boiling Water
4 Organic Green Tea with Mandarin Orange Flavor Tea Bags
1/2 teaspoon organic honey or organic agave nectar
1 ripe organic banana
1/2 cup ice cubes
Instructions:
Plate the organic tea bags in the boiling water and allow to steep for 2 minutes. Remove tea bags and squeeze out any remaining tea. Add organic honey or organic agave nectar and stir to dissolve. Place in the refrigerator and allow to chill about 30 minutes. Place the chilled tea in a blender. Add the organic banana and ice cubes. Blend until smooth and creamy. Serves 2
