Organic Valentine’s Day Pavlova

3 organic egg whites
¾ cup fine organic sugar
¼ teaspoon cream of tartar
1 ½ cups no-free organic whipped cream
1 cup sliced, fresh organic strawberries

Instructions:

Preheat oven to 250F. Line a cookie sheet with parchment paper. Take a 9-inch plate and place upside down on the parchment paper, then draw an outline of that plate (to make a nice even round shape).

Place organic egg whites in a bowl and beat eggs until very foamy using an electric mixer. Add cream of tartar to the organic egg whites then continue mixing on medium speed until peaks start to form. Slowly add organic sugar a little bit at a time and beating on high between each addition. Keep mixing until egg whites are stiff. Carefully spoon the meringue mixture onto the parchment paper, following the outline to shape into a circle. Flatten the center of the meringue a little bit so that the edges are slightly higher.

Gently place in the oven and bake for approximately 45 minutes to 1 hour. Switch off oven and allow meringue to dry (in oven). This may take about 2 hours. Finally, remove from oven and allow to cool. Once meringue is cool, spread the organic no-free whipped cream over it and top with sliced organic strawberries. Serve immediately.

Grilled Organic Honey Pineapple Slices & Madeira Yogurt

2 tablespoons organic honey
6 fresh organic pineapple slices, Peeled and cut 1/2 inch thick
1 cup low-fat organic vanilla yogurt
2 tablespoons Madeira liqueur

Instructions:

Preheat grill. Place organic pineapple slices on baking tray and drizzle organic honey evenly over the pineapple slices. Sprinkle organic brown sugar onto pineapple slices and place on  grill over medium heat.Cook about 10 minutes, turning slices occasionally, until browned on both sides.

In a bowl combine organic yogurt and Madeira and serve with the grilled pineapple.

Organic Almond Sponge Cake

1 cup organic cake flour
1/2 cup organic sugar, divided
10 organic egg whites, at room temperature
1 1/4 teaspoons cream of tartar
1 teaspoon organic vanilla extract
1/4 teaspoon organic almond extract

Instructions:

Place organic flour and half of the organic sugar in a sifter and sift together in large mixing bowl. Place organic egg whites in another mixing bowl. Add cream of tarter and beat on high speed with an electric mixer. Add half the remaining organic sugar and continue to beat for 1 minute. Add the rest of the organic sugar and beat again for 1 minute. Stir in organic almond and organic vanilla extracts. With a rubber spatula mix together the flour mixture and the egg mixture. Preheat oven to 350 degrees. Place batter in an ungreased cake pan. Bake 45 minutes or until the cake bounces back easily when lightly touched.

Cream Cheese Rolled Organic Pancakes with Organic Raspberry Preserves

3 organic eggs
2 tablespoon organic canola oil
1 cup organic skim milk
3/4 cup organic flour, sifted
1/4 pound light organic cream cheese
1/4 pound low-fat organic cottage cheese
2 tablespoon organic sugar
1 teaspoon organic vanilla extract
1/2 cup non-fat organic sour cream
1/2 cup organic raspberry preserves

Instructions:

Place organic eggs in a small mixing bowl. Pour in organic canola oil and organic milk and whisk until completely combined together. Add organic flour and organic salt. With a rubber spatula work from the bottom up to mix, making sure all the flour is completely moistened. The batter should be smooth with no lumps. Spray a skillet with an organic non stick cooking spray. Pour 4 tablespoons of the batter into the prepared skillet. Cook over medium heat 2 minutes or until the bottom is a nice golden brown. Do not flip the pancake over. Remove from skillet and place on a piece of wax paper with the cooked side up. Continue until all the batter is used. With an electric mixer on medium speed beat together in a separate bowl organic egg, organic cream cheese, organic cottage cheese, organic sugar and organic vanilla. With a spoon fill each pancake with the egg mixture being sure to not go all the way to the edges. Roll the pancake up. Continue until each pancake is filled and rolled. Spray the skillet again with organic non stick cooking spray. Place rolled pancakes into the skillet. Cook over medium heat about 5 minutes or until a golden brown being sure to cook all sides this time. Serve with organic sour cream and organic raspberry preserves on the side.

Organic Pork Loin with Pear Puree

2 1/2 cups organic pears, peeled, cored and cut into chunks
1/3 cup pure water
1 tablespoon organic lemon juice
1/4 cup organic honey
1/2 teaspoon + 1/2 tablespoon organic pepper
1 boneless organic pork loin, about 1 3/4 pounds
2 teaspoons organic tarragon
2/3 cup organic dry white wine

Instructions:

Preheat oven to 350 degrees. Pour organic wine into bottom of a large baking pan. Place organic pork loin into the pan. Sprinkle with organic tarragon and 1/2 teaspoon of organic pepper. Bake pork loin 1 hour 45 minutes. Bake until internal temperature is 160 degrees. Remove pork loin and allow to stand for 15 minutes before carving. Place a large saucepan over medium high heat. Add organic pears to the pan. Pour in pure water and organic lemon juice. Add organic honey and 1/2 tablespoon organic pepper. Bring mixture to a quick boil. Continue cooking for 15 minutes or until pears are fork tender. Remove from heat and place in a blender. Puree until smooth. Slice the pork loin and serve with the pear puree.
