Chocolate Organic Banana Mousse

Ingredients:

2 Tablespoons organic skim milk
4 teaspoons organic sugar
1 medium organic banana, cut into quarters
2 teaspoons organic cocoa powder
1 teaspoon organic vanilla
1 cup plain organic no-fat yogurt
Organic banana slices for garnishing

Instructions:

Place organic milk, vanilla, sugar, cocoa powder and banana quarters in a blender and blend until smooth. Transfer to a bowl and gently mix in organic yogurt. Chill until set. Spoon mixture into serving bowls and top with banana slices.

Organic Grand Marnier Fruit Salad

 

Ingredients:

1 organic peach, peeled
2 organic plums
24 green seedless organic grapes, cut in half
2 teaspoons fresh organic lemon juice
1 tablespoon organic brown sugar
2 tablespoons grand Marnier

Instructions: 

In a bowl mix the organic fruit, organic lemon juice, organic sugar and grand Marnier. Cover and chill for 1 to 2 hours for the fruit to fully absorb the liqueur. Spoon fruit over low-fat frozen organic vanilla yogurt or serve fruit in bowls with a side of organic whipped cream.

Organic Low-Fat Berry Trifle

Ingredients:

1 8oz package of low-fat organic cream cheese
2 cups fat-free organic milk
1 8.5oz package angel food cake (cut into 1-inch slices)
1 8oz package of whipped topping
1 cup sliced organic strawberries
1 cup organic raspberries or organic blueberries
1 package instant organic vanilla pudding (low-fat)

Instructions:

Beat organic cream cheese in a large bowl using electric mixer. Slowly add organic milk, ½ cupful at a time and mixing well. Add pudding mix and mix well. Gently stir in whipped topping and then fold in fruit.

Arrange 1/3 of the angel cake slices into a serving bowl and top with 1/3 of the pudding and fruit mixture, repeat layers two more times. Refrigerate until set (about 30 minutes) and serve.

A wonderful way to top off a meal. Of course, you will have taken your daily dose of vitamins and minerals!

Organic Cooked Pears with Spiced Syrup

Ingredients:

2 cups pure water
2 cups organic sugar
12 organic peppercorns
1 cinnamon stick
2 whole organic cloves
3 organic pears, peeled

Instructions:

Pour pure water into a large saucepan and place over low heat. Stir in organic sugar until dissolved. Add organic peppercorns, cinnamon stick and organic cloves. Place organic pears in the pan. Place a piece of parchment paper over the pears and lay a plat on top of the pan. This will keep the pears under the water so they will tender. Cook over low heat 25 minutes or until the pears are fork tender. Remove pears and place on a plate. Continue cooking the liquid another 20 minutes or until it becomes a syrup. Strain the liquid to remove peppercorns, cinnamon stick and cloves. Cut pears half lengthwise and remove the seeds and core. Slice pear halves in quarter. Spoon the syrup over the cut pears.

Serving Size: 1/2 pear with syrup

Organic Baked Pears with Cranberry Wine Sauce

This is a light and delicious dessert. You can also serve with a little organic fat-free frozen yogurt or fat-free organic whipped cream.

Ingredients:

4 ripe, firm organic dessert pears (peeled, cored and cut into quarters)
1/3 cup organic red wine
¼ cup dried organic cranberries
Cinnamon and nutmeg for sprinkling

Instructions: 

Preheat oven to 350F. Place organic pear quarters in a baking dish and pour organic wine over the pears. Scatter chopped organic cranberries over the pears and sprinkle with a little nutmeg and cinnamon. Bake for approximately 20 minutes or until tender.
