Ingredients:
1 cup organic all purpose flour
3/4 teaspoon organic baking powder
3/4 teaspoon organic baking soda
1/4 teaspoon organic nutmeg
2 organic eggs, separated
1 cup organic buttermilk
2/3 cup whole milk ricotta cheese (organic, if you can find it)
1 tablespoon grated organic lemon peel
Instructions:
Place the organic flour, organic baking powder, organic baking soda and organic nutmeg into a large mixing bowl. Whisk together, blending well. Place the organic egg yolks in a separate bowl. Pour in the organic buttermilk. Add the organic ricotta cheese and organic lemon peel and whisk until completely blended. Place the organic egg whites in a separate bowl. Beat with an electric mixer on medium high speed until soft peaks begin forming. Add the organic ricotta cheese mixture to the organic flour mixture and blend until just combined. Carefully fold in the egg whites. Heat a skillet over medium heat until hot. Coat the skillet with organic oil. Pour 1/4 cup of batter onto the prepared skillet. Cook 2 minutes or until bubbles appear around the edge. Flip and continue cooking 1 minute or until a light brown. Continue until all the batter has been used. Heat oven to 200 degrees and place cooked flapjacks on an oven safe platter in the heated oven to keep them warm until ready to serve. Makes 15 flapjacks

Ingredients:
2 pounds ground organic turkey
1 organic onion, chopped
2 (15 oz.) cans organic kidney beans, undrained
1 (28 oz.) can unsalted organic tomatoes, diced
1 (8 oz) pkg. organic mushrooms, sliced
6 organic celery stalks, chopped
1 organic red bell pepper, chopped
1 organic yellow bell pepper, chopped
1 organic green bell pepper, chopped
4 tsp. organic chili powder
1 tsp organic cayenne pepper
Instructions:
Place organic turkey in a large pot over medium heat. Brown the turkey while breaking it up with a fork as it browns. When the turkey begins to brown, add the organic onion. Continue cooking until the turkey is no longer pink and the onion becomes tender (about 20 minutes). Add in the organic beans, organic tomatoes and organic mushrooms, stirring slightly to combine. Add the organic celery and organic peppers, stirring well to combine all the ingredients. Sprinkle in the organic chili powder and organic cayenne pepper. Reduce heat to low and continue cooking for 3 hours. Chili will thicken slightly while cooking. Be sure to stir often to keep the flavors incorporated together. Serves 8

Ingredients:
6 oz red lentils
12 fl oz water
4 oz organic white cheddar cheese, grated
1 organic onion, finely chopped
1 tbsp fresh organic parsley, chopped
½ tsp organic cayenne pepper
Dash of organic lemon juice
1 large organic egg
3 tbsp organic cream
Sea salt and organic black pepper
1 tsp organic butter
Instructions:
Preheat oven to 375°F and lightly grease a 1 lb loaf tin with 1 tsp of organic butter.
In a large covered pot, cook the lentils in boiling water for about 10 – 15 minutes. Check the water level so the lentils don’t burn! If necessary, add a bit of boiling water. The mixture should resemble a heavy puree when it is done. Take the pot off the heat and stir in the organic cheese, organic onion, organic parsley, organic cayenne pepper and organic lemon juice. Add sea salt and organic pepper to taste.
In a small bowl, beat a large organic egg and mix in the organic cream. Pour the mixture over the lentil puree. Press the lentil puree into the prepared loaf tin and put it in the oven for about 45 – 50 minutes. The top of the lentil loaf should be golden brown. Let the lentil loaf cool down a bit before taking it out of the loaf tin.
Enjoy this healthy vegetarian meal with a nice tossed salad!

3 organic eggs
2 tablespoon organic canola oil
1 cup organic skim milk
3/4 cup organic flour, sifted
1/4 pound light organic cream cheese
1/4 pound low-fat organic cottage cheese
2 tablespoon organic sugar
1 teaspoon organic vanilla extract
1/2 cup non-fat organic sour cream
1/2 cup organic raspberry preserves
Instructions:
Place organic eggs in a small mixing bowl. Pour in organic canola oil and organic milk and whisk until completely combined together. Add organic flour and organic salt. With a rubber spatula work from the bottom up to mix, making sure all the flour is completely moistened. The batter should be smooth with no lumps. Spray a skillet with an organic non stick cooking spray. Pour 4 tablespoons of the batter into the prepared skillet. Cook over medium heat 2 minutes or until the bottom is a nice golden brown. Do not flip the pancake over. Remove from skillet and place on a piece of wax paper with the cooked side up. Continue until all the batter is used. With an electric mixer on medium speed beat together in a separate bowl organic egg, organic cream cheese, organic cottage cheese, organic sugar and organic vanilla. With a spoon fill each pancake with the egg mixture being sure to not go all the way to the edges. Roll the pancake up. Continue until each pancake is filled and rolled. Spray the skillet again with organic non stick cooking spray. Place rolled pancakes into the skillet. Cook over medium heat about 5 minutes or until a golden brown being sure to cook all sides this time. Serve with organic sour cream and organic raspberry preserves on the side.

2 1/2 cups organic pears, peeled, cored and cut into chunks
1/3 cup pure water
1 tablespoon organic lemon juice
1/4 cup organic honey
1/2 teaspoon + 1/2 tablespoon organic pepper
1 boneless organic pork loin, about 1 3/4 pounds
2 teaspoons organic tarragon
2/3 cup organic dry white wine
Instructions:
Preheat oven to 350 degrees. Pour organic wine into bottom of a large baking pan. Place organic pork loin into the pan. Sprinkle with organic tarragon and 1/2 teaspoon of organic pepper. Bake pork loin 1 hour 45 minutes. Bake until internal temperature is 160 degrees. Remove pork loin and allow to stand for 15 minutes before carving. Place a large saucepan over medium high heat. Add organic pears to the pan. Pour in pure water and organic lemon juice. Add organic honey and 1/2 tablespoon organic pepper. Bring mixture to a quick boil. Continue cooking for 15 minutes or until pears are fork tender. Remove from heat and place in a blender. Puree until smooth. Slice the pork loin and serve with the pear puree.
