Organic Vegetable Medley with Vinegar Salsa

Ingredients:

3/4 cup fresh organic parsley, chopped very fine
2 tablespoons capers, rinsed and chopped coarsely
3 tablespoons white organic onions, chopped very fine
3 cloves organic garlic, minced
2 tablespoons organic red wine vinegar
1/2 cup extra virgin organic olive oil
3 tablespoons low carb breadcrumbs, toasted
1/4 teaspoon organic black pepper
3/4 pound small organic green beans, blanched
3/4 pound small new organic potatoes, boiled and cut into wedges
3/4 pound small organic beets, cooked and cut into wedges

Instructions:

Place organic parsley, capers, organic onions and organic garlic into large mixing bowl. Pour in organic vinegar and organic olive oil. Mix together well to combine all the ingredients. Add bread crumbs and mix until completely moist. Sprinkle in organic black pepper and stir to incorporate. Place organic beans, organic potatoes and organic beets on a plate. Cover vegetables with the sauce completely before serving.
